Our Sous Chef position is highly demanding during our high volume season and implies taking on a great variety of tasks in both the culinary and managerial sectors. Our Sous Chef must be able to prepare meats, fish, vegetables, soups and other hot food products as well as prepare and portion food products prior to cooking using a variety of techniques, equipment and utensils. A Sous Chef will also perform other duties in the areas of food and final plate preparation including plating and garnishing of cooked items and preparing appropriate garnishes for all hot menu item plates. One must maintain a clean and organized work environment at all times and have a good teamwork mentality and is willing to be flexible to the needs of the restaurant and the kitchen manager. It is the Sous Chef’s role to help train and oversee the kitchen staff and assure that all expectations of cleanliness, cooking, procedure and policy are being met at all times. The kitchen manager reserves the right to adjust expectations as they deem fit and the Sous chef is expected to support and back up the kitchen manager. This position demands great leadership skills and may frequently require 50-60 hours per week of work time.
